Didascalie Extra Brut is a light, smooth-looking champagne, its pale yellow colour sparkling with lemon yellow glints.
At first sniff, Didascalie Extra Brut offers up notes of apple, cream, acacia flowers, groundnut, marzipan and lemon. After a few minutes, the champagne unfurls notes of nougat, praline, butter, quince, fig, blackcurrant, plum, pink grapefruit and cumin.
The first contact with the palate is supple and fresh. Didascalie Extra Brut develops a voluptuous, crisp body underpinned by pink grapefruit and fleshy fruit acidity. The mid-palate is marked by a sand-and-clay minerality giving it a supple and full-bodied structure. The overall impression is of vinosity delicately enveloped in the fruity body. The finish is light and elegant, delivering a dry, flavoursome mouthfeel.
