Perles d’Or is lovely to look at, displaying a green yellow hue underpinned by lemon yellow glints.
Perles d’Or has a very pared-back aroma evoking notes of lemon, white peach, acacia flowers, iodine and shellfish limestone. The second sniff reveals notes of aniseed, hazelnut, infusions, ginger, camomile, lemon heart, shelled almond and vineyard peach.
The first contact with the palate is a bold attack, underscored by lemony acidity. The champagne, with its clean, sea-air tang, has a mid-palate marked by a sand-and-clay minerality giving it a supple structure that lingers. The overall impression is of confectionary, revealing, with great delicacy, a rich creamy finish that melts in the mouth.
